Have you been feeling inexplicably exhausted lately? If so, you might be lacking in iron, especially if you are a woman. Iron is an important component of hemoglobin, the substance in red blood cells that carries oxygen from your lungs to the rest of your body. Iron deficiency can lead to fatigue, such as in iron deficiency anemia, and complications during pregnancy.
Studies demonstrate that vitamin C, when taken in conjunction with an iron supplement, increases the absorption of iron in the small intestine. Vitamin C helps convert plant-based sources of iron into a more easily absorbable form.
Prevent problems by monitoring your intake of iron-rich foods and by taking a supplement. Iron is found in food in two forms: heme and non-heme iron. Heme iron, which makes up 40% of animal protein, is easily absorbed by the body. However, it’s also a “pro-oxidant,” meaning it can cause damage to cells as it is metabolized. Non-heme iron, which makes up 60% of animal and 100% of vegetable protein, is less easily absorbed but does not carry the same oxidative risk of heme iron.
While the above may make you think that being a vegetarian or vegan would logically lead to iron deficiency, the research does not support that assumption. Not all iron is created equally. Research is now showing that heme iron (from animal protein) is associated with higher risk for heart disease, stroke, and diabetes, while non-heme iron appears to be the healthiest way to meet iron requirements.
